Season fillets with salt and pepper. On a board, roll out 2 patty shells thinly. (Each should be large enough to wrap around individual fillets.) Spread pate on top of each fillet. Wrap the fillets in puff pastry (pate side up), sealing the edges with the egg mixture. Brush egg mixture all over pastry to give a glossy sheen. Roll out another shell and cut out decorative shapes. Decorate each wrapped fillet with cutouts and brush again with egg mixture. Bake the wrapped fillets on cookie sheet in a preheated 375 degree oven for about 20 minutes. Put meat in roasting pan with lid.&lt;br /&gt;Pour wine over meat. Cut up potatoes and arrange around meat.&lt;br /&gt;Sprinkle meat and potatoes with garlic salt and onion. Put meat in roasting pan with lid.&lt;br /&gt;Pour wine over meat. Cut up potatoes and arrange around meat.&lt;br /&gt;Sprinkle meat and potatoes with garlic salt and onion. Cover with lid and put in preheated oven. Bake 20 minutes and turn oven off. Do not open door for 2 hours. After 2 hours, take meat and potatoes out and pour in gravy and stir. Add the mushrooms and cook them until they are soft.&lt;br /&gt;Remove from pan and set aside.&lt;br /&gt;WIPE the pan. Add another teaspoon of olive oil and raise the heat to high.&lt;br /&gt;PAT the steaks dry. Cover each side with pepper . Sear steaks on both sides until a crust forms. Turning only once. Remove the steaks from the pan.&lt;br /&gt;POUR the brandy in the pan and light it on fire baby! When the flame dies down add the beef stock and roasted garlic . Keep cooking until the sauce is reduced, add salt and pepper to taste.&lt;br /&gt;&lt;br /&gt;RETURN the steaks to the pan with their juices. Add the mushrooms and heat for 1 minute. Serve the steaks by spooning the mushroom and sauce on top and sprinkling gorgonzola cheese&lt;br /&gt;on top.
